OVEN FRIED SALMON CAKES 
1 lg. egg or whites from 2 lg. eggs
1 can (15 oz.) salmon, drained & flaked or mackerel
1 c. fresh bread crumbs
1/4 c. minced scallions or onion
2 tbsp. fresh lemon juice
1 tsp. Worcestershire sauce

Heat oven to 400 degrees. Spray cookie sheet with vegetable cooking spray.

Beat egg with a fork in a medium size bowl and add remaining ingredients and mix until well blended. Shape in 8 (1/2 inch) thin patties. Place in prepared cookie and bake 10-12 minutes.
