CHEF'S CHOICE SQUASH CASSEROLE 
1 1/2 c. cooked squash
2 well-beaten eggs
1 c. saltine cracker crumbs
3 tbsp. onion
3 tbsp. butter
Salt and pepper
1 c. scalded milk

Combine all ingredients, adding hot milk last. Pour into greased 1 or 1 1/2- quart casserole. Bake at 350 degrees for 1 hour. Serves 6.
