BASIC OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1/4 c. chopped nuts (walnuts or pecans)
1/4 c. raisins, dates, or currants
1 tbsp. baking powder
1/4 c. brown sugar (1/4 cup honey or molasses may be substituted)
1 1/4 c. skim milk
2 egg whites (or egg substitute for 2 eggs)
2 tbsp. vegetable oil

Combine oat bran, nuts, raisins, and baking powder. Stir in brown sugar (or liquid sweetener) and oil. Blend with oat bran mixture.

Pour into well-greased muffin tins; bake at 425 degrees for 15 minutes.

VARIATION: Banana nut - add 2 mashed bananas.
