ITALIAN POTATO SALAD | |
6 med. sized potatoes 1/3 c. light olive oil 1/2 c. Heinz gourmet fine wine (red) vinegar 1 clove garlic, finely minced 1/2 red Bermuda onion, finely chopped 1 tbsp. parsley 1 tsp. salt Cook potatoes until fork tender (do not overcook). In a large jar with top, pour olive oil, vinegar, garlic, parsley, salt and onions. Shake jar thoroughly, place in refrigerator. When potatoes are cold, cut in small cubes and before ready to serve, add contents of jar and mix thoroughly. Serves 6. |
