ITALIAN POTATO SALAD 
5 lbs. potatoes
1 lg. onion
2 med. tomatoes
3/4 c. olive oil
1/4 c. wine vinegar
Garlic powder
Onion powder
1 tbsp. oregano
Salt

Boil potatoes until soft. Drain and peel. Cover and refrigerate overnight. Cut potatoes in quarters and then slice 1/4 inch thick. Cut tomatoes into wedges. Cut onion in half and then slice 1/8 inch thick. Combine all ingredients and add seasonings to taste. Refrigerate and serve cold.
