ITALIAN POTATO SALAD 
5-6 potatoes
1 stalk celery
1/2 onion
Salt & pepper to taste
Oil
Vinegar
1/4 tsp. oregano (optional)

Boil potatoes until tender, dice. Cool. Dice celery and onion. Add to potatoes. Add oregano, salt and pepper. Add about 2 capfuls each of vinegar and oil over potatoes. Mix carefully. Let stand 1/2 hour before serving.
