FRUITED CHEESE SOUFFLE SALAD 
Fruit juice and hot water to make 1 c.
1/2 c. cold water
2 tbsp. lemon juice
1/4 tsp. salt
2 med. bananas
1 (#303) can mixed fruits for salads
1 pkg. lime Jell-O
1/2 c. mayonnaise
1 (3 oz.) pkg. cream cheese
1/2 c. walnuts, chopped (optional)
Crisp salad greens

Drain fruit saving the juice, add water to make 1 cup liquid; heat. Pour hot liquid over the Jell-O and stir until dissolved. Add cold water, lemon juice, mayonnaise and salt. With hand beater, beat until well blended. Pour into shallow pan or Pyrex dish. Quick-chill in freezer for 15 to 20 minutes. Turn out mixture into bowl and beat until fluffy. Mix cream cheese with the fruit and fold into gelatin mixture, then fold in sliced bananas. Pour into rectangular dish or pan and chill until set. To serve, cut into squares and place on crisp greens and top with a bit of mayonnaise and a cherry.
