MANDARIN ORANGE SOUFFLE SALAD 
2 (3 oz.) pkg. orange gelatin
2 c. boiling water
1 c. orange juice
2 tbsp. lemon juice
1 c. mayonnaise or orange yogurt
2 sm. cans mandarin oranges
4 ripe bananas, sliced

Dissolve the gelatin in boiling water. Add the orange and lemon juices and mayonnaise. Beat with rotary beater and then pour into a flat container. Allow to partly set in the refrigerator. Remove to bowl and beat again. Fold in mandarin oranges and sliced bananas. Chill until firm. Unmold or cut into squares. Serve on lettuce leaves or other greens. Makes 8 servings.
