2 wedges sharp cheese, grated (1 New York + 1 reg. sharp cheese)
1 pt. mayonnaise
1 lg. cream cheese
1 jar (3) pimientos, mashed

Let cheese come to room temperature. Put in mixer and beat cheese well. Add cream cheese and mayonnaise. Mash pimientos with fork. Add to cheese and mayonnaise mixture. Chill and serve. This recipe makes a lot of pimiento cheese.
