CHINESE FRIED RICE 
2/3 c. water
3 c. cooked rice
5 tbsp. butter
2 eggs
2/3 c. chopped onion
1/4 c. soy sauce

Cook eggs in butter in skillet. Add rice and onions. Cook until slightly brown. Add soy sauce and water which have been mixed together. Simmer until liquid has been absorbed.

Variations: Add pieces of chicken, pork, beef. Add vegetables, water chestnuts, bean sprouts.
