MEXICAN LASAGNA 
1 pkg. taco seasoning mix
1 (12 oz.) jar salsa, divided
1 c. refried beans, divided
1 c. shredded cheddar cheese, divided
1 lb. ground beef
6 corn or flour tortillas
1 c. sour cream, divided
Shredded lettuce and sliced
Black olives for garnish

Crumble beef into a dishwasher-safe plastic colander suspended over a 1-quart casserole dish. Add taco seasoning. Microwave on HIGH for 5-6 minutes, or until no longer pink, stirring midway through. Discard drippings and place meat in the 1-quart casserole dish. Spread 1/4 cup salsa in a 10-inch pie plate. Top with 3 tortillas, overlapping edges. Spread with 1/2 cup beans, half of the beef mixture, 1/3 cup sour cream and 1/2 cup cheese. Repeat layers.

Microwave on HIGH for 5-7 minutes or until heated completely through. Garnish with lettuce, remaining sour cream, salsa and olives, if desired. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
