MEXICAN LASAGNA 
1 lb. ground turkey
1/2 c. chopped onion
1/2 c. green pepper
2 c. canned tomatoes, chopped
1 envelope taco seasoning
2 c. cottage cheese
6 (6 inch) flour tortillas
Lettuce, tomato, salsa and low-cal sour cream (optional)
2 eggs
6 oz. shredded Cheddar cheese

Brown turkey with onion and green pepper. Add tomatoes and taco seasoning. Simmer uncovered 5 minutes.

In bowl combine cottage cheese, 2 eggs and 4 ounces Cheddar. Place 3 tortillas on bottom of sprayed 9 x 13 inch glass baking dish. Spoon meat evenly over tortillas. Top with remaining tortillas. Then spread with cottage cheese mixture.

Cover with foil and bake at 350 degrees for 40 minutes. Sprinkle with remaining cheese evenly over top and continue to bake 5 minutes uncovered or until cheese melts. Cut into 6 servings. Serve with optionals.
