KORPUJA (FINN TOAST) 
2 pkg. dry yeast
1/2 c. warm water
2 1/2 c. milk
1 stick butter
1/2 c. sugar
2 tsp. salt
2 beaten eggs
6 to 8 c. flour
2 c. sugar
2 tsp. cinnamon

Soak dry yeast in warm water. Scald milk with butter. Add sugar and salt. Cool to lukewarm. Stir in yeast mixture. Add beaten eggs and mix well. Then add flour. Knead lightly and let rise until double in bulk. Divide into 6 separate balls and put in regular bread pans. Let rise 1 hour and bake at 375 degrees for 20 minutes. Next day, slice in desired thickness, 1/2 to 3/4 inch.

Mix 2 cups sugar and 2 teaspoons cinnamon in large bowl. Rub above mixture on both side of bread, put on cookie sheets and bake for 12 minutes at 400 degrees or until golden brown. No need to turn slices.
