ZUCCHINI BREAD 
3 eggs
1 1/2 c. sugar
3/4 c. salad oil
2 c. grated zucchini, unpeeled
3 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves

Beat eggs until foamy. Add sugar, oil, vanilla and zucchini; mix well. Add remaining ingredients and mix well. Pour into 3 small greased bread pans. Bake at 350 degrees about 50 minutes or until toothpick comes out clean.
