ZUCCHINI RAISIN BREAD 
3 eggs
2 c. sugar
3/4 c. vegetable oil
2 c. grated unpeeled zucchini
2 c. flour
1 tsp. salt
1 tbsp. cinnamon
1/4 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. vanilla
1 c. chopped nuts
3/4 c. yellow raisins

Beat eggs well, add sugar and oil and continue to beat for a few seconds. Stir in zucchini. Combine dry ingredients and add to egg mixture. Add vanilla, nuts and raisins, stirring by hand to combine. Divide batter into well-greased and floured bread pans and bake at 350 degrees for 55 to 60 minutes. Do not underbake. This is a very moist bread and makes 2 loaves.

Really delicious. Light with a good crunchy crust on top. I omitted nuts and used a mixture of regular and golden raisins (because my husband ate all the golden ones). Bottoms stuck to the loaf pans a bit. Next time will line bottoms with parchment paper. Couldn't have been easier to make. Just the right amount of sweetness.
