ZUCCHINI RAISIN BREAD | |
3 eggs 2 c. sugar 3/4 c. vegetable oil 2 c. grated unpeeled zucchini 2 c. flour 1 tsp. salt 1 tbsp. cinnamon 1/4 tsp. baking powder 2 tsp. baking soda 1 1/2 tsp. vanilla 1 c. chopped nuts 3/4 c. yellow raisins Beat eggs well, add sugar and oil and continue to beat for a few seconds. Stir in zucchini. Combine dry ingredients and add to egg mixture. Add vanilla, nuts and raisins, stirring by hand to combine. Divide batter into well-greased and floured bread pans and bake at 350 degrees for 55 to 60 minutes. Do not underbake. This is a very moist bread and makes 2 loaves. |
