ZUCCHINI RAISIN BREAD | |
1 3/4 c. all-purpose flour 3/4 c. sugar 1/2 c. Kretschmer original toasted or honey crunch wheat germ 4 tsp. baking powder 1 tsp. cinnamon 1 c. shredded zucchini (about 1 med.) 2/3 c. water 1/4 c. vegetable oil 2 egg whites (slightly beaten) 3/4 c. raisins Heat oven to 350 degrees. Grease bottom only of 8x4 inch loaf pan. Combine dry ingredients; stir in zucchini. Combine water, oil and egg whites. Add to flour mixture, mixing just until dry ingredients are moistened. Stir in remaining ingredients. Spoon into prepared pan. Bake 50 to 55 minutes or until golden brown. Cool 10 minutes, remove from pan. Cool completely on wire rack. (One loaf - 16 slices.) |
