ZUCCHINI RAISIN QUICK BREAD OR
MUFFINS
 
2 beaten eggs
1/2 c. vegetable oil
1/2 c. honey
1 tsp. vanilla
1 c. whole wheat flour
2 tbsp. wheat germ
2 tbsp. bran
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. shredded zucchini
1/2 c. raisins

In a small bowl combine eggs, oil, honey and vanilla. In a large bowl combine flour, wheat germ, bran, cinnamon, baking powder and soda. Add liquid ingredients and stir until mixed. Blend in zucchini and raisins.

To make bread pour into greased pan and bake 45 minutes at 350 degrees. For muffins pour into lined muffin tins and bake at 350 degrees for 25 minutes.

For variation: applesauce-raisin-substitute 1 cup unsweetened applesauce for the zucchini and add 1/4 cup more flour, 1/4 teaspoon ground cloves and 1 teaspoon nutmeg.
