ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. salad oil
2 c. grated zucchini, unpeeled
3 c. sifted flour
1/4 tsp. baking powder
2 tsp. baking soda
1 tbsp. vanilla
1 tbsp. cinnamon
1 tsp. salt
1 c. chopped walnuts or pecans

Beat eggs and add sugar, oil and zucchini. Blend together. Sift dry ingredients and add to egg mixture. Add nuts and vanilla. Blend thoroughly. Bake in two greased and floured 5 x 9 inch loaf pans at 350 degrees for one hour or until top spring back at light touch. Let stand in pan for 10 minutes before removing.
