AMISH FRIENDSHIP BREAD (1970'S
VERSION)
 
Note: DO NOT use any type of metal utensil to mix starter. Do not refrigerate starter - just leave on kitchen counter.

For Starter:

1 cup whole milk
1 cup all-purpose flour
1 cup granulated sugar

For Bread:

2 cups Starter
1/2 cup oil
1/2 cup orange juice
1/2 cup milk
1 teaspoon vanilla
3 eggs
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons cinnamon
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 large box vanilla instant pudding

Cinnamon/Sugar mixture:

1 cup granulated sugar
2 teaspoons cinnamon

In a 1-gallon zippered Baggie add:

1 cup whole milk
1 cup all-purpose flour
1 cup granulated sugar

Zip the bag closed and squeeze the bag to mix ingredients. Tomorrow start on Day 1.

Day 1:

Do Nothing. If bag has inflated, just open bag to remove air before squeezing.

Day 2:

Squeeze the bag.

Day 3:

Squeeze the bag.

Day 4:

Squeeze the bag.

Day 5:

Add: 1 cup milk, 1 cup all-purpose flour, 1 cup sugar. Squeeze the bag.

Day 6:

Squeeze the bag.

Day 7:

Squeeze the bag.

Day 8:

Squeeze the bag.

Day 9:

Squeeze the bag.

Day 10:

Add:

1 cup milk
1 cup all-purpose flour
1 cup sugar

Squeeze the bag.

After following Day 10 directions, you can now make bread.

To Make Bread: Pour 2 cups starter into a large mixing bowl.

Add:

1/2 cup oil
1/2 cup orange juice
1/2 cup milk
1 teaspoon vanilla
3 eggs

Mix well.

In a separate bowl mix together:

2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons cinnamon
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large box of vanilla instant pudding

Add to wet ingredients. Mix well but do not overmix.

Preheat oven to 325°F. if using glass bread pans or 300°F if using dark colored bread pans.

Grease two (2) bread pans. Sprinkle well with some of the cinnamon/sugar mixture. Pour batter evenly into pans. Sprinkle tops of batter with additional cinnamon/sugar mixture.

Bake in a 325°F oven for 1 hour if using glass bread pans or Bake in a 300°F oven for 1 hour if using dark colored bread pans.

After removing pans from oven, let bread cool for 30 minutes before removing bread from pans. Let loaves finish cooling before slicing.

The left-over starter can be passed out to 4 of your friends with a copy of the directions (hence the name Friendship Bread).

The ziplock bags will each contain 1 cup of starter.

Or you can save one bag of starter and start over on a new batch of bread; or you can freeze all the starters to use at a later time. Either way, you would always restart at Day 1.

This bread freezes quite well.
