CARROT HONEY DATE MUFFINS 
1/4 c. butter
1/2 c. honey
1/2 c. milk
2 eggs
1 tbsp. orange peel
1 c. white flour
1 c. whole wheat flour
1 tbsp. baking powder
1 tsp. salt
1 c. grated carrots
1 c. diced dates

Heat oven to 425 degrees. Butter muffin cups. Melt butter with honey. Off heat, stir in milk, then eggs and peel and beat to blend. In a bowl, combine dry ingredients and stir thoroughly. Stir in butter mixture and when well mixed, stir in carrots and dates. Spoon into cups and bake 15-20 minutes. Let stand 5 minutes. Serve warm with butter or cream cheese and orange marmalade.
