CARROT HONEY MUFFINS 
1/4 c. butter
1/2 c. honey
1/2 c. milk
2 eggs
1 tbsp. grated orange peel or 1 tbsp. orange juice
1 c. flour
1 c. whole wheat flour
1 tbsp. baking powder
1 tsp. salt
1 c. grated carrots
1 c. diced dates

Melt butter with honey. Stir in milk, orange peel, eggs and beat to blend. Mix dry ingredients and mix in butter mixture until well blended. Stir in carrots and dates. Bake at 375 degrees 15 minutes in greased muffin tins.
