CARROT HONEY RAISIN LOAF | |
1 1/2 c. vegetable oil 1 1/2 c. honey 1/4 c. blackstrap molasses 3 lg. eggs 1 tsp. vanilla extract 1 tsp. almond extract 4 c. grated carrots 2 c. unbleached flour 2 c. whole wheat flour 4 tsp. baking powder 4 tsp. cinnamon powder 2 tsp. ground nutmeg 1 1/2 c. raisins or currants Heat oven to 350 degrees. Lightly grease 3 pans, if not using disposables. Using a large bowl, combine the oil, honey, molasses and eggs; blend well. Stir in extracts and carrots. Add dry ingredients, then dry fruit. Stir 4-5 minutes to mix thoroughly, then pour into prepared pans. Bake 45 minutes. Let cool on rack 10 minutes. |
