SPINACH STRAWBERRY SALAD 
1 lb. spinach, cleaned, stems removed and torn into bite size pieces
2 Bibb lettuce, cleaned and torn into bite size pieces
1/4 lb. sliced mushrooms
1 can mandarin oranges, drained
1 med. red onion, cut in half rings
1 pt. strawberries, hulled and cut in fourths

Toss spinach, lettuce, mushrooms, and onion together. Scatter oranges and strawberries on top. Pour dressing over.

DRESSING:

1/2 c. sugar
1 tsp. poppy seeds
1/3 c. red wine vinegar
1 tsp. dry mustard
1/4 tsp. salt
1 tbsp. lemon juice
1 tsp. paprika
1/3 c. honey
1 c. salad oil
1 tsp. grated onion

Mix together in bowl sugar, mustard, paprika, poppy seed, and salt. Add honey, vinegar, lemon juice, and onion. Put into blender; on low speed, pour oil into mixture very slowly. Makes 2 cups.
