MAXIMILIAN'S CAFE BARBECUED RIBS 
1 onion, minced very fine
1 carrot, minced very fine
Zest (grated peel) from 2 lemons
2 tbsp. salad oil
4 tbsp. brown sugar
1 c. honey
2 c. Open Pit barbecue sauce
4 tbsp. apple cider vinegar

Saute onions and carrots in oil. Add lemon zest, brown sugar and honey until well dissolved. Add barbecue sauce and vinegar; simmer for 35-40 minutes.

To prepare ribs: A day ahead, bake approximately 6 pounds of beef or pork ribs in pan with 2 inches of water (room temperature) for 4 to 5 hours at 200 degrees F. Drain.

Mix sauce. Marinate ribs in sauce overnight. The next day: Heat ribs in oven or on the grill. Serve with warm sauce.
