VEAL PAPRIKA 
2 1/2 lbs. cubed veal
1 tsp. salt and freshly ground black pepper
1 slice bacon, finely chopped
2 onions, finely chopped
1 clove garlic, finely chopped
6 mushrooms, sliced
1 tomato, peeled, seeded and chopped
1 tbsp. paprika
1 c. chicken broth
2 tbsp. sherry
1/4 c. yogurt
2 tbsp. finely chopped parsley

Season veal with salt and pepper. Fry bacon crisp; drain and transfer to casserole. Brown veal in bacon fat and transfer to casserole. Add onion and garlic to frying pan and fry 3 minutes.

Add mushrooms and fry 2 minutes. Stir in tomato, paprika and add broth and sherry. Transfer to casserole. Cover and place in 350 degree oven for 1 hour. Add yogurt and garnish with parsley. Serves 6. 210 calories per serving.
