CORN FRITTERS | |
2 c. fresh corn kernels (4-6 ears of corn) 2 eggs, separated 4 tbsp. all-purpose flour 1 tsp. salt 1/2 tsp. cayenne pepper Corn oil Clover or orange blossom honey With a sharp knife, scrape kernels off cob. (Frozen corn may be used if out of season.) Pour into a large mixing bowl. Lightly beat the egg yolks and add to the bowl of kernels along with flour, salt and cayenne pepper. Mix lightly. Beat the egg whites until almost stiff and fold into corn mixture. Heat corn oil to 360 degrees in a deep fryer or deep saucepan. With a soup spoon, drop batter into hot oil. Deep fry 4 to 5 fritters at a time, turning occasionally, for 3 to 4 minutes or until golden brown. Drain on paper towels. Drizzle with honey and serve immediately. Makes 12 to 16 fritters, serving 6 to 8. |
