CORN FRITTERS 
2 c. fresh or frozen corn
2 eggs
1/4 c. flour
1 tsp. salt
1/8 tsp. pepper
1 tsp. baking powder
2 tbsp. cream
4 tbsp. shortening or lard or bacon fat

Combine beaten eggs, flour, baking powder, salt, and pepper to corn. Mix thoroughly, add cream. Melt fat in pan, drop corn mixtures by spoonfuls into hot fat. Brown on both sides. 16 fritters.

If using frozen corn, slightly cook before added to other ingredients.
