BAKED STUFFED PORK CHOPS 
1 c. finely diced, cored, pared cooking apples
1/4 c. raisins
1/4 c. fresh bread crumbs
3/4 tsp. salt
1 1/2 tbsp. sugar
2 tbsp. butter
1 tbsp. minced onion
3 tbsp. hot water
4 rib or loin pork chops, 1 inch thick
Salt
Pepper
1/2 c. water

Mix apples, raisins, crumbs, 3/4 teaspoon salt, sugar. In hot butter in skillet, cook onion until tender; add to apple mixture. Sprinkle with hot water; mix well.

Trim piece of fat from chops. Slit each chop from bone side almost to fat, making a pocket. Sprinkle with salt and pepper, inside and out. Stuff loosely with apple mixture.

In same skillet over low heat, heat the piece of fat trimmed from chops; then remove. Brown chops in melted fat until rich golden brown on both sides, 15 to 20 minutes. Place chops in greased 2-quart casserole.

Start heating oven to 350 degrees. Add 1/2 cup water to drippings in skillet; stir to loosen brown bits; pour over chops. Bake covered 45 minutes. Uncover; bake 15 minutes or until done.
