LIME PICKLES | |
2 gal. med. size pickles 2 c. lime 2 qts. cider vinegar 4 1/2 lbs. sugar 1 tsp. whole cloves 1 tsp. celery seed 1 tsp. pickling spice 1 tbsp. coarse salt Slice 2 gallons of medium size pickles and cover with - 2 gallons water and 2 cups of household lime, be sure all are covered and under, let stand 24 hours. Drain and wash, cover with cold water and let stand 3 hours. Drain and cover with - 2 quarts cider vinegar, 4 1/2 pounds sugar. In cheese cloth put 1 teaspoon each of: whole cloves, celery seed, pickling spices and 1 tablespoon coarse salt. Let stand overnight in this cold syrup, then in the morning simmer for 35 minutes and seal. Add green food coloring. |
