LIME PICKLES 
7 lb. cucumbers or young zucchini squash, sliced 1/4" thick, do not peel
2 gal. cold water
2 c. hydrated lime
2 qt. vinegar
9 c. sugar
1 tbsp. celery seed
1 tbsp. whole cloves
1 tbsp. whole pickling spices
3 tbsp. pickling salt

Mix together the cold water and lime. Add slices. Soak 24 hours. Rinse well (3 times or more). Cover with cold water, soak 3 hours. Drain. Cover with the following: Vinegar, sugar, celery seed, cloves, pickling spices and salt. Enclose spices in bag. Let stand overnight (do not heat this mix).

In the morning add a bottle of green coloring, and boil for 15 minutes. Seal in sterilized jars. (I omit coloring.) I use 9 pounds cucumbers. Makes 6 quarts.
