LEMON BUTTER 
1 lb. butter
6 lemons
1/2 c. chopped parsley
1/4 c. brandy

Clarify butter. Skin, de-seed, and dice lemon. Add butter, lemons, parsley, and brandy; mix well.

Serve over fish, veal, or poultry. For Matre De, add Cayenne to taste.
