CHICKEN LONG RICE 
1 bundle long rice
3 lb. chicken pieces
1 tsp. minced ginger root
1 clove garlic, crushed
2 c. water
1 tsp. salt
2 tsp. shoyu
2 tbsp. sliced green onions

Soak long rice in warm water for 30 minutes; cut into 2 inch pieces. Place chicken, ginger, garlic and water in a 2 quart baking dish; cover. Cook in microwave oven 6 minutes. Rotate dish a half turn and cook 6 minutes. Add long rice, salt and shoyu; cover. Cook 8 minutes. Add green onions.

Since microwave ovens vary in power, you may need to adjust your cooking time.
