CHICKEN PICCATA 
4 chicken breast halves, skinned & boned
1 c. sliced mushrooms
Garlic powder to taste
1/4 c. low salt chicken broth or fruit juice
2 tbsp. lemon juice
2 tbsp. chopped parsley

1. Coat skillet with no stick spray. Brown chicken. Remove from pan.

2. Cook mushrooms and garlic powder.

3. Return chicken to pan. Add liquids. Simmer until tender, stirring occasionally.

4. Garnish with parsley. Serves 4.
