CHICKEN PICCATA 
4 chicken breasts, boneless & skinless
4 tbsp. butter
1 tbsp. oil
3 tbsp. lemon juice
1/2 c. white wine
Salt, pepper & parsley
Lemon slices (may be added as garnish)

Sprinkle cutlets with flour. Heat oil and butter. Saute chicken until brown. Add lemon, salt and pepper and parsley. Chicken cooks until thoroughly done. Remove chicken from the pan. Scrape pan. Add wine or water to make sauce and return chicken to pan. Add lemon garnish and enjoy!

I did not have chicken or white wine...so I tried it with mahi mahi and I used low sodium chicken broth and a few capers. I doubled the sauce recipe and everyone LOVES it...delicious with rice pilaf and fresh oven roasted asparagus...thanks
