CHEESE CRISPS 
1 1/2 c. flour
1/2 c. soft butter
3/4 lb. sharp cheddar cheese, grated
1/2 tsp. caraway seeds (optional)

Knead all ingredients until well blended. Shape small pinches of dough into balls, about size of walnut. Place on ungreased cookie sheet. Flatten to 1/4 inch thickness. Bake 10 to 12 minutes until lightly browned. Store in tightly closed container.
