OAT AND HONEY BRAN MUFFINS 
1 c. oats
3/4 c. wheat germ
1/2 c. natural bran
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. buttermilk or soured milk
3/4 c. liquid honey
2 eggs, beaten
1/2 c. oil
1 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 c. raisins
1/2 c. nuts

Combine oats, wheat germ, bran, salt, cinnamon and buttermilk. Mix well and let stand 15 minutes. Add honey, eggs and oil. Mix well. Combine flour, baking powder, and baking soda. Add to egg mixture. Stir just until moistened.

Stir in raisins and nuts. Fill well-greased muffin cups 3/4 full. Bake at 375 degrees for 20-25 minutes. Loosen edges and turn out on wire racks to cool. Makes 1 1/2 dozen muffins.
