CHILI 
1/4 lb. suet (optional)
6 lbs. lean meat
1 c. chili powder (4.5 oz.)
2 tbsp. ground cumin
2 tbsp. oregano
2 tbsp. salt
1-2 tbsp. cayenne
4 cloves garlic, minced
2 qts. beef stock
1/2 c. Casa Marina (or corn meal)
1/2 c. water

Brown meat and suet a little at a time; drain excess fat in colander. Put drained meat into large kettle. Add rest of ingredients. Cook slowly 1 1/2 to 2 hours.

Mix Casa Marina and water. Makes a paste. Add to meat mixture and simmer 30 minutes.
