BAKED CARROTS 
Scrape and slice 1 pound of carrots. Boil until tender. Drain. Melt 1/2 stick of butter and 1/2 inch slice of Velveeta cheese together over a low flame. Stir so it doesn't scorch. Pour over carrots and mix. Melt 2 tablespoons butter and mix with soft bread crumbs (2 slices bread). Pour carrot mixture into greased baking dish. Top with buttered bread crumbs. Bake until the topping is golden brown in a 375 degree oven for 15 to 20 minutes.
