SQUASH CASSEROLE 
2 c. boiled squash, mashed
1 c. Ritz cracker crumbs, plus extra crumbs for top
1/2 to 2/3 c. grated cheddar cheese
2 tbsp. butter
Salt and pepper to season
2 eggs
1/2 c. finely chopped onion

Mix all ingredients together thoroughly. Put in 2 quart casserole dish with more Ritz crumbs over top and grated cheese on top of crumbs. Put in oven and bake at 350 degrees for 20-30 minutes, or until cheese is melted and casserole is thoroughly done.
