STIR FRIED BEEF AND PEPPERS 
1 lb. lean beef steak, thinly sliced
1 sweet red pepper, seeded and cut into 3/4 inch squares
1 sweet green pepper, seeded and cut into 3/4 inch squares
1 tomato, cut in wedges
4 tbsp. oil

MARINADE:

2 garlic cloves, minced
1 onion, chopped
3 tbsp. soy sauce
1 tsp. corn starch
1 tbsp. oil

Wok cook:

Marinate the beef in the garlic, onion, soy sauce, corn starch and oil for 15 to 30 minutes.

Heat the wok and add 2 tablespoons oil. When it begins to smoke add the pepper and the tomatoes. Stir fry until they are slightly softened and remove them from the wok.

Add the remaining oil. Drain the beef reserving the marinade. Stir fry the beef in the wok until it begins to brown.

Return the peppers and tomato to the wok. Add the marinade and cook for 1 minute. Serve immediately. Serves 6.
