BEEF - ENO CORNBREAD 
1 c. plus 1 tbsp. yellow cornmeal
2/3 c. milk
1/2 c. peanut oil
2 eggs
1/4 tsp. garlic salt
1/2 tsp. baking soda
2 c. Cheddar cheese, shredded
1 (17 oz.) cream style corn
1 1/2 lbs. ground beef
1 lg. onion, chopped
4 jalapenos, chopped

Combine 1 cup cornmeal, milk, eggs, salt, baking soda, oil and corn in bowl; set aside. Cook ground beef until lightly browned; drain well and set aside. Sprinkle 1 tablespoon cornmeal in greased 10 1/2-inch cast-iron skillet. Pour half of the batter into skillet. Sprinkle evenly with beef; top with onion and cheese. Sprinkle peppers over the top. Pour remaining batter over the top. Bake at 350 degrees for 50 minutes, or until golden brown.
