GREEN TOMATO MINCEMEAT 
12 green tomatoes
6 lg. pears
9 lg. apples
4 1/2 c. seedless raisins
Rind of 3 oranges (ground)
3 tbsp. grated lemon rind
1 c. cider vinegar
1/3 c. orange juice
1/3 c. lemon juice
3 c. light molasses
1 c. brown sugar
2 tbsp. cinnamon
1 1/2 tsp. nutmeg
1 1/2 tsp. ginger
1 1/2 tsp. allspice
1 1/2 tsp. ground cloves
1 1/2 tsp. salt

Coarsely grind tomatoes, pears, and apples. Place all ingredients except spices in pot. Bring to a boil and cook briskly until starts to thicken, about 30 minutes. Add spices and cook for 5 minutes. Pack in hot sterilized jars, seal. Makes 7 quarts.
