STUFFED GREEN PEPPER 
2 lbs. hamburger
1 lg. onion
2 pkgs. crackers
2 c. bread crumbs
1/2 c. catsup
1 can mushroom soup
2 eggs
1 c. rice (optional)
8 to 10 lg. peppers
2 qts. tomato juice

Wash peppers and core them. Mix all ingredients together, like making meatloaf, except your tomato juice. After it is mixed together, stuff the mixture into peppers. After getting peppers stuffed, pour tomato juice over top of peppers until you cover them. Bake in oven (about 400 degrees) for 2 to 3 hours or until peppers are soft.
