NEW YORK STYLE CHEESECAKE 
6 (8 oz.) pkg. cream cheese
6 eggs
1 3/4 c. white sugar
1 pt. of sour cream
1 tsp. vanilla
1 pkg. of graham cracker crumbs
2 or 3 tbsp. melted butter

Mix crumbs and melted butter. Press up sides of 10 inch springform pan. Turn oven on 400 degrees.

Combine cream cheese, eggs, sugar, sour cream and vanilla in large bowl. Mix until very smooth. Pour into pan that has been wrapped in heavy duty foil on outside up to 1/4 inch from rim. Place springform pan in another pan with 1/4 inch of water. Bake for an hour. Test with toothpick. If not done bake another 10 minutes. Let cool in pan. Can refrigerate 2 to 3 days before cutting or can eat when chilled.
