MIA'S CARROT CAKE | |
1 1/4 c. oil 2 c. brown sugar 2 c. flour 3 eggs 1 tsp. cinnamon 2 tsp. baking soda 2 tsp. vanilla 1 c. shredded coconut 2 c. shredded carrots 1/2 tsp. salt 1 c. chopped walnuts 1 c. crushed pineapple with juice Combine all ingredients in large bowl and mix with wooden spoon. Pour into 9 x 13 inch pan. Bake at 350 degrees for 1 hour. FROSTING: 4 oz. cream cheese 1/4 c. butter 2 c. sugar Vanilla Mix until creamy and spread on cooled cake. |
