MEXICAN STYLE CASSEROLE | |
2 lbs. ground meat 2 tbsp. cooking oil 1 med. bell pepper 1 lg. onion, chopped 1 (12 oz.) pkg. noodles 1 can stewed tomatoes 1 lg. can whole kernel corn 1 lb. Velveeta cheese, grated 1/2 tsp. salt or to taste 1/2 tsp. pepper 1/4 tsp. Tabasco, optional 1/2 tsp. chili powder Black olives, sliced Brown meat, onions, and bell pepper in oil. Add tomatoes and simmer. Cook noodles according to package directions. Add corn, noodles, and cheese to meat mixture, reserving some cheese for topping. Add salt, pepper, Tabasco and chili powder. Bake in 9 x 13 inch casserole for 45 minutes at 325 degrees. Remove from oven and top with cheese and sliced black olives. Bake until cheese melts. This is good to serve for a crowd. |
