ORANGE PRALINE SOUFFLE 
6 med. sweet potatoes, peeled & cooked
1 tsp. orange peel, grated
1 tsp. salt
1/2 tsp. ground ginger
1/4 c. orange juice
1/4 tsp. ground pepper
5 tsp. unsalted butter, divided
1 egg
1/4 c. brown sugar
1/4 tsp. ground cinnamon
1/4 c. nuts, coarsely chopped

Heat oven to 375 degrees. In a large bowl, mash potatoes; add orange juice, orange peel, ginger, salt, pepper, 2 teaspoons of butter and egg. Beat with mixer until fluffy. Spoon into casserole - smooth the top.

In a small saucepan, combine remaining butter, brown sugar and ground cinnamon. On low heat, cook uncovered, stirring until blended (about 3 minutes). Spoon on top of potatoes. Sprinkle pecans.

Bake covered for 25 minutes. Bake uncovered for 15 minutes or until thoroughly cooked. Serves 6.
