BEET PICKLES 
4 c. water
1 c. vinegar
1 c. sugar
2 tbsp. whole pickling spice

Cook beets until done and remove from kettle and put in COLD water to remove skins. If large beets, slice them; small beets can be left whole. Have the above ingredients boiling, add beets and again bring to a boil and boil 5 to 10 minutes. Put in sterilized jars and seal while hot. Very good!
