JANE'S PICKLED BEETS 
1 c. sugar
1 c. vinegar
2 c. water
Whole mixed pickling spice

Cut off tops of beets; wash and put in large pan. Cover with water; cook until beets are soft when pricked with a fork. Pour off hot water; pour cold water on beets. Pealing will slide off. Quarter or slice; put in enamel or stainless steel pan.
