POTATO PANCAKE OR
KARTOFFELPUFFER
 
2-3 potatoes
1 med. onion
Salt, pepper
1 egg
Parsley flakes

Grate potatoes and onion; mix in egg and other ingredients. Panfry by spoonfuls in hot oil or shortening on both sides until brown and crispy. Serve with applesauce, salads or any meat dishes.
